A fast-casual Italian street-food brand that wanted to be known for genuine hospitality. They set out to build it across 50 locations.
Company goal was 80 NPS; the 2022 average was 55, and 20% of stores sat below 30. Standards varied store to store, and the people who carried the culture were spread thin as new markets opened.

Meet the team
We spent a decade building Chipotle’s training engine. Since then we’ve run the same playbook at tea houses, dumpling houses, pizza chains, coffee shops, hotels, and neighborhood favorites.
Chapter one
From 2012 to 2021 we ran Training, Internal Communications, Operations Services, and Learning and Development at Chipotle. The company went from 1,410 restaurants to 2,966, and from 37,000 employees to 97,000. The crisis years tested every system we had.
We rebuilt the crew-to-GM career path, launched a proprietary tablet-based training platform, created accredited training that became the foundation of tuition reimbursement, and produced the conferences and weekly media that reached every restaurant in the country.
Those systems still run today. Chipotle now promotes roughly 90% of its new restaurant GMs from within.
Chapter two
A playbook that only works at one company is a memoir. So we took it everywhere. Different cuisines, different countries, different stages of growth. It kept working. That’s when we knew it was a system.
Chagee arrived from Asia with 7,000 locations and no U.S. training. We built all of it. They debuted at a $5.1B valuation.
Din Tai Fung holds the industry’s best AUV. We film their story and standards to a bar that matches the dumplings.

Din Tai Fung · Two chapters
In 1958, Yang Bing-yi and his wife opened a cooking oil business in Taipei and named it Din Tai Fung. When cheap canned oil wiped out the trade, they gave half the storefront over to dumplings. That was 1972, and it is the reason the restaurant exists at all.
Yang’s son Frank brought Din Tai Fung to America in 2000, opening in Arcadia, California. Today Frank’s sons Albert and Aaron run Din Tai Fung North America as co-CEOs. Third generation, same family.
We sat down with Albert and told two chapters of that story: the family’s, and the food’s. Every new hire learns they’re joining a family business, not a restaurant job.

Bun Mee · San Francisco
Denise Tran was born in Saigon, raised outside New Orleans, and on track to make partner at a law firm. Her father’s early death stopped all of it. In 2008 she carried his ashes back to Vietnam and traveled the country alone, from Saigon to Hanoi.
She came home and opened Bun Mee in San Francisco in 2011. A Vietnamese sandwich shop built on her mother’s cooking, still on the menu under Mama Tran’s name.
New hires don’t get that secondhand. They hear Denise say why it exists, in her own words, before their first shift.

Mendocino Farms · The 20th
Mario Del Pero and Ellen Chen are married. They started sketching Mendocino Farms in 2003 and opened the first shop in downtown Los Angeles in 2005. They named it for Mendocino County: free-spirited, community first, neighbors looking after neighbors.
Both have since stepped back from running the company day to day. Eat Happy didn’t step back with them. It’s still what the place runs on.
We filmed Mario and Ellen for the brand’s 20th anniversary, so the people who joined in year nineteen know exactly what they walked into.

Chagee · Animated origin
Zhang Junjie lost his parents at ten and had almost no schooling. At seventeen he took a job at a milk tea shop. He taught himself to read and write on the job, starting with the drink names on the menu.
In November 2017 he opened the first Chagee in Kunming, Yunnan. There are now more than seven thousand tea houses. The first U.S. store opened in Los Angeles in May 2025.
There was no archive footage of any of it. So we animated it. That film is how every American hire meets the founder.
